Vegan Carrot Cake Baked Oatmeal – Single Serve

Ingredients:

  • 1/2 cup oats
  • 1 tbsp ground flax
  • 1 tbsp coconut sugar
  • 1 tsp cinnamon
  • 1/2 cup shredded carrot
  • 3/4 cup unsweetened almond milk
  • 1 tbsp dairy free protein yogurt
  • 3 tbsp dairy free cream cheese
  • 1 tsp pure maple syrup
  • 2 tsp chopped walnuts (optional)

Instructions:

  • Preheat oven to 350
  • Spray a small oven save dish with nonstick spray
  • In the dish, mix oats, flax seed, cinnamon, and coconut sugar until we’ll combined
  • Add carrots and almond milk, mix until we’ll combined
  • Bake for 30 minutes
  • While the oats bake, make cream cheese frosting by combining dairy free yogurt, cream cheese, and maple syrup
  • When oats are done cooking, allow to cook, then top with about 1/4 of the cream cheese frosting mixture (save the rest for another recipe!)
  • Top with walnuts
