Mini Cheesecake Bites

Ingredients:

Crust:

  • 1/2 cup Almond Meal
  • 2 tablespoons Butter

Cheesecake:

  • 8 ounces Cream Cheese, room temperature
  • 1 large Egg
  • 1/2 teaspoon Vanilla Extract
  • 1/2 teaspoon Lemon Juice
  • 1 pinch Salt
  • 1/4 cup Stevia
  • Optional: about 4 Strawberries

Instructions:

  • Preheat oven to 350 degrees
  • Melt butter until liquid
  • Mix in Almond Meal until it feels like crumbly playdough
  • Line a muffin tin with cupcake liners
  • Take about a teaspoon of dough at a time and press into the bottom of the cupcake liners
  • Bake for about 5 minutes, until slightly brown and crispy
  • Beat Cream Cheese until creamy
  • Add Vanilla Extract, Lemon, Egg, and Stevia and beat until combined
  • Using an ice cream scooper, fill all the crust-bottomed muffin cups evenly (almost to the top)
  • Bake for about 15 minutes, until slightly jiggly
  • Refrigerate for ideally 24 hours, if you don’t have that long you can put them in the freezer for as long as possible
  • Once finished cooling, remove from liners (slide a knife around the edges to loosen them up)
  • Optional: Cut up some strawberries and place on the tops of the mini cheesecakes
