Ingredients:
Crust:
- 1/2 cup Almond Meal
- 2 tablespoons Butter
Cheesecake:
- 8 ounces Cream Cheese, room temperature
- 1 large Egg
- 1/2 teaspoon Vanilla Extract
- 1/2 teaspoon Lemon Juice
- 1 pinch Salt
- 1/4 cup Stevia
- Optional: about 4 Strawberries
Instructions:
- Preheat oven to 350 degrees
- Melt butter until liquid
- Mix in Almond Meal until it feels like crumbly playdough
- Line a muffin tin with cupcake liners
- Take about a teaspoon of dough at a time and press into the bottom of the cupcake liners
- Bake for about 5 minutes, until slightly brown and crispy
- Beat Cream Cheese until creamy
- Add Vanilla Extract, Lemon, Egg, and Stevia and beat until combined
- Using an ice cream scooper, fill all the crust-bottomed muffin cups evenly (almost to the top)
- Bake for about 15 minutes, until slightly jiggly
- Refrigerate for ideally 24 hours, if you don’t have that long you can put them in the freezer for as long as possible
- Once finished cooling, remove from liners (slide a knife around the edges to loosen them up)
- Optional: Cut up some strawberries and place on the tops of the mini cheesecakes
