Ingredients:
- Olive Oil Spray
- 6 Large Eggs
- 2 Ripe Bananas
- 3/4 cup Canned Black Beans, drained and rinsed
- 1/2 cup Unsweetened Cocoa Powder
- 2 tsp Pure Vanilla Extract
- 1.5 tsp Baking Powder
- 2 tsp Pure Maple Syrup
- 1/3 cup dairy free dark chocolate chip
- 1/4 cup Natural Peanut Butter, optional
Instructions:
- Preheat oven to 350 degrees.
- Lightly coat an 8×8 baking dish with olive oil spray and set aside.
- Add eggs, bananas, beans, cocoa powder, vanilla, baking powder, and maple syrup to food processor or a large blender. Blend until smooth.
- Pour mixture into baking dish and sprinkle with chocolate chips.
- Bake for 50-55 minutes, until the center is set and a toothpick comes out clean.
- Allow to cool for approximately 10 minutes, top with peanut butter if desired, slice and enjoy! 😋
