Protein Brownies

Description: Who says you can’t have dessert for breakfast, lunch, or dinner? These protein brownies may be a dessert traditionally, but they are packed with enough nutrients to be perfect any time of day!

Ingredients:

  • Olive Oil Spray
  • 6 Large Eggs
  • 2 Ripe Bananas
  • 3/4 cup Canned Black Beans, drained and rinsed
  • 1/2 cup Unsweetened Cocoa Powder
  • 2 tsp Pure Vanilla Extract
  • 1.5 tsp Baking Powder
  • 2 tsp Pure Maple Syrup
  • 1/3 cup dairy free dark chocolate chip
  • 1/4 cup Natural Peanut Butter, optional

Instructions:

  • Preheat oven to 350 degrees.
  • Lightly coat an 8×8 baking dish with olive oil spray and set aside.
  • Add eggs, bananas, beans, cocoa powder, vanilla, baking powder, and maple syrup to food processor or a large blender. Blend until smooth.
  • Pour mixture into baking dish and sprinkle with chocolate chips.
  • Bake for 50-55 minutes, until the center is set and a toothpick comes out clean.
  • Allow to cool for approximately 10 minutes, top with peanut butter if desired, slice and enjoy! 😋
