Vegan Chickpea Cookie Dough

Ingredients:

  • 1 15oz can Chickpeas, rinsed and drained
  • 1/3 cup Pure Maple Syrup
  • 1/2 cup Natural Peanut Butter
  • 1/2 tsp Pure Vanilla Extract
  • Unsweetened Almond Milk, to taste
  • Pinch Pink Himalayan Salt
  • 2 tbsp Dairy Free Dark Chocolate Chips
  • 2 tbsp Unsweetened Coconut Flakes, optional

Instructions:

  • Place all ingredients, except the chocolate chips and coconut, in a food processor
  • Purée until smooth + thick
  • Add Almond Milk, slowly, as need until desired consistency is reached
  • Place cookie into two bowls and top with Chocolate Chips and Coconut
  • For best results, refrigerate for a few hours, but you can dig in right away if you can’t wait!
