Ingredients:
- 1 15oz can Chickpeas, rinsed and drained
- 1/3 cup Pure Maple Syrup
- 1/2 cup Natural Peanut Butter
- 1/2 tsp Pure Vanilla Extract
- Unsweetened Almond Milk, to taste
- Pinch Pink Himalayan Salt
- 2 tbsp Dairy Free Dark Chocolate Chips
- 2 tbsp Unsweetened Coconut Flakes, optional
Instructions:
- Place all ingredients, except the chocolate chips and coconut, in a food processor
- Purée until smooth + thick
- Add Almond Milk, slowly, as need until desired consistency is reached
- Place cookie into two bowls and top with Chocolate Chips and Coconut
- For best results, refrigerate for a few hours, but you can dig in right away if you can’t wait!
