Chicken + Veggie Stir Fry

Description:  A quick and easy dinner when you don’t have meals prepped. You can customize this with whatever seasonings and vegetables you like!

Ingredients:

  • 1 frozen Chicken Breast
  • 1 cup Low Sodium Chicken Broth
  • 1 clove of Minced Garlic
  • 1/4 pound Brussel Sprouts, halved
  • 1 Carrot, chopped
  • 1/4 Green Pepper, sliced
  • 1/4 Red Pepper, sliced
  • 1/4 Orange Pepper, sliced
  • 1/4 Yellow Pepper, sliced
  • Red Pepper Flakes, Everything But the Bagel Seasoning, and Chipotle Chicken Seasoning to Taste

Instructions:

  • Place frozen Chicken Breast into Instant Pot and season with Chipotle Chicken Seasoning
  • Add Chicken Broth
  • Select ‘Poultry’ and cook Chicken on high pressure for 12 minutes. Make sure pressure valve is sealed!
  • Chop veggies while the Chicken cooks
  • Spray a medium sized skillet and saute Garlic over medium-high heat until fragrant
  • Saute Brussel Sprouts and Carrots for 2-3 minutes, then add peppers. Saute until soft
  • Season with Red Pepper Flakes and EBTB Seasoning to taste
  • Add Spinach and saute until wilted and remove from heat
  • When chicken is finished cooking, manually release pressure, cut, and serve with veggies
