Ingredients:
- 1 frozen Chicken Breast
- 1 cup Low Sodium Chicken Broth
- 1 clove of Minced Garlic
- 1/4 pound Brussel Sprouts, halved
- 1 Carrot, chopped
- 1/4 Green Pepper, sliced
- 1/4 Red Pepper, sliced
- 1/4 Orange Pepper, sliced
- 1/4 Yellow Pepper, sliced
- Red Pepper Flakes, Everything But the Bagel Seasoning, and Chipotle Chicken Seasoning to Taste
Instructions:
- Place frozen Chicken Breast into Instant Pot and season with Chipotle Chicken Seasoning
- Add Chicken Broth
- Select ‘Poultry’ and cook Chicken on high pressure for 12 minutes. Make sure pressure valve is sealed!
- Chop veggies while the Chicken cooks
- Spray a medium sized skillet and saute Garlic over medium-high heat until fragrant
- Saute Brussel Sprouts and Carrots for 2-3 minutes, then add peppers. Saute until soft
- Season with Red Pepper Flakes and EBTB Seasoning to taste
- Add Spinach and saute until wilted and remove from heat
- When chicken is finished cooking, manually release pressure, cut, and serve with veggies
