Crock Pot Chicken + Tortellini Soup

Ingredients:

  • 1 1/2 pounds boneless skinless Chicken Breast
  • 5 Carrots. peeled and chopped
  • 1 medium Onion, diced
  • 4 cloves Garlic, minced
  • 3 tablespoons Olive Oil
  • 1/2 teaspoon dried thyme
  • 1 Bay Leaf
  • 6 cups Low Sodium Chicken Borth
  • 1 cup Water
  • Salt and Black Pepper to taste
  • 1 box (7oz) Tortellini

Instructions

  • Add in whole Chicken Breasts, Carrots, Onon, Garlic, Olive Oil, Thyme, and Bay Leaf to crock pot
  • Cover with Chicken Broth, Water, Salt, and Peper
  • Cover and cook on low for 6 to 7 hours
  • Remove cooked chicken breasts and cut into bite sized pieces
  • Place Chicken back in crock pot and add Tortellini
  • Cover and cook until noodles are tender, about 5-10 minutes
  • Enjoy! 🙂
