Ingredients:
- Nonstick Cooking Spray
- 1/4 medium Onion, chopped
- 1/2 cup cooked, shredded Chicken
- 1 teaspoon Taco Seasoning
- 1 medium Bell Pepper (color of your choice, I liked to use a variety), cut into 1 inch wide slices
- 1/4 cup Shredded Cheddar Cheese
- 1 medium Jalapeno, sliced, seeded and deveined
- 1/2 cup salsa
Instructions:
- Preheat oven to 375
- Heat medium saucepan over medium-high heat, lightly coat with cooking spray
- Add onion, cook for 4-5 minutes or until onion is translucent, stir frequently
- Arrange peppers on a lined baking sheet, top with chicken, onion, and cheese
- Bake for 5-8 minutes, or until cheese melts
- Top with jalapenos and salsa
