Bell Pepper Nachos

Description:  Delicious and cheesy bell pepper nachos sure to satisfy those nacho cravings! Perfect to share or keep for yourself :).

  • Nonstick Cooking Spray
  • 1/4 medium Onion, chopped
  • 1/2 cup cooked, shredded Chicken
  • 1 teaspoon Taco Seasoning
  • 1 medium Bell Pepper (color of your choice, I liked to use a variety), cut into 1 inch wide slices
  • 1/4 cup Shredded Cheddar Cheese
  • 1 medium Jalapeno, sliced, seeded and deveined
  • 1/2 cup salsa


  • Preheat oven to 375
  • Heat medium saucepan over medium-high heat, lightly coat with cooking spray
  • Add onion, cook for 4-5 minutes or until onion is translucent, stir frequently
  • Arrange peppers on a lined baking sheet, top with chicken, onion, and cheese
  • Bake for 5-8 minutes, or until cheese melts
  • Top with jalapenos and salsa
  • Enjoy! 🙂
