Ingredients:
- 1 head of Cauliflower, cut into florets
- 2 teaspoons Olive Oil
- 1/2 teaspoon Cumin
- 1/2 teaspoon Sea Salt
- 1/4 teaspoon Chili Powder
- 1/4 teaspoon Garlic Powder
- 1/2 cup Cheddar Cheese
- 1 cooked Chicken Breast, shredded
- Optional: Taco Seasoning, Scallions, and/or Salsa
Instructions:
- Preheat oven to 425 degrees
- Toss Cauliflower and seasonings with oil
- Spread seasoned Cauliflower on a baking sheet and bake for 30-35 minutes
- Once cauliflower is cooked, top with cheese and shredded chicken and bake for 3-5 minutes, until cheese is melted
- Top with optional toppings and enjoy! 🙂
