Ingredients:
- 2 cups Oats
- 1 tsp Baking Powder
- 1 tsp Cinnamon
- 1 tsp Pumpkin Pie Spice
- 1/2 tsp Sea Salt
- 1 Egg
- 1 cup Pumpkin Puree
- 1 cup Unsweetened Almond Milk
- 1/2 cup Unsweetened Applesauce
- 1/3 cup Honey
- 2 tbsp unsalted Butter, melted
- 1 tsp Pure Vanilla Extract
- 1/3 cup Dark Chocolate Chips
Instructions:
- Preheat oven to 375
- In a large mixing bowl, mix together all dry ingredients (except chocolate chips)
- In a medium mixing bowl, whisk together all liquid ingredients
- Slowly mix in the liquid mixture to the dry mixture
- Fold in chocolate chips (I like to save a couple chips to sprinkle on to of my bake before it goes into the oven)
- Pour mixture into a greased 8×8 baking dish and top with remaining chips (if you wish)
- Bake for 35-40 minutes, or until set + cooked through
- Let cool for 15 minutes and cut into 9 squares
- Serve warm or store in the fridge for meal prep
