Pumpkin Chocolate Chip Oat Bake

Description: This is part of my go to breakfast in the fall! I cannot get enough of it and I KNOW you won’t be able to either!!

Ingredients:

  • 2 cups Oats
  • 1 tsp Baking Powder
  • 1 tsp Cinnamon
  • 1 tsp Pumpkin Pie Spice
  • 1/2 tsp Sea Salt
  • 1 Egg
  • 1 cup Pumpkin Puree
  • 1 cup Unsweetened Almond Milk
  • 1/2 cup Unsweetened Applesauce
  • 1/3 cup Honey
  • 2 tbsp unsalted Butter, melted
  • 1 tsp Pure Vanilla Extract
  • 1/3 cup Dark Chocolate Chips

Instructions:

  • Preheat oven to 375
  • In a large mixing bowl, mix together all dry ingredients (except chocolate chips)
  • In a medium mixing bowl, whisk together all liquid ingredients
  • Slowly mix in the liquid mixture to the dry mixture
  • Fold in chocolate chips (I like to save a couple chips to sprinkle on to of my bake before it goes into the oven)
  • Pour mixture into a greased 8×8 baking dish and top with remaining chips (if you wish)
  • Bake for 35-40 minutes, or until set + cooked through
  • Let cool for 15 minutes and cut into 9 squares
  • Serve warm or store in the fridge for meal prep
