Instant Pot Stuffed Pepper Soup

  • 1 lb Ground Beef
  • 2 tbsp dried minced Onion
  • 1 tbsp Garlic, minced
  • Salt and pepper, to taste
  • 3 cups low-sodium Beef Broth
  • 24 oz Marinara Sauce
  • 1 cup frozen Cauliflower Rice
  • 2 cups Green Pepper, chopped
  • 1/2 tsp Oregano
  • 1/2 tsp Basil


  • In Instant Pot, brown Ground Beef on “Saute” with Garlic and Onion
  • Drain and return to the pot
  • Add all remaining ingredients
  • Cook on the “Soup” setting with high pressure for 15 minutes
  • Allow to naturally release for 15 minutes. Then, quick release
  • Enjoy! 🙂
